Cashews are pretty much a super nut (kind of like some people we know:). They are an energy food and a super brain food all wrapped into one, so you can take a test while running a marathon after a couple ounces of these beauties.
As we know, they are packed with protein. They contain fewer fats than many nuts but the fats they do contain are unsaturated fatty acids and of these, most are monosaturated fats, similar to those found in olive oil. In fact, these nuts not only don't make you less healthy, they actually reduce the risk of cardiovascular diseases, heart diseases and more! They contain a ton of copper (98% DV in 1/4 cup), which helps keep energy high, helps the body generate antioxidants and keep blood vessels and bones healthy. Cashews are also high in phosphorus, manganese, magnesium and zinc. Phew! Keep a couple of these babies on hand. Maybe you can build a raft out of them too!
